Ichiro Mashita, sushi chef at the Tokyo Kaikan in Los Angeles, invented the California Roll in the early 1970s. Mashita added avocado as a substitute for tuna. He also turned the roll inside-out because Americans did not like seeing and chewing the nori on the outside of the roll.

Invented in Los Angeles by Chef Ichiro Mashita, the California Roll was the first sushi roll to substitute avocado for tuna.
